Ozark Pudding
1 egg
2 T flour
1/8 t salt
1 apple, diced and peeled
1/2 c sugar
1 1/2 t baking powder
1/2 c nuts, broken
1 t vanilla
Beat eggs and sugar until smooth. Add flour, powder, salt. Add nuts, apple, vanilla. Bake in 8″ buttered pie tin 35 min at 350. Serve with whipped cream or ice cream. Serves 3-4.
Note: we triple this recipe for a 9×13 pan, but do not triple the sugar.
I don’t see why not. The recipe was meant to use minimal flour in the first place (rah, rah Depression-era cuisine!), so changing the type of flour shouldn’t do any harm.

And your Ozark Pudding Trivia for the Day: this was one of Bess Truman’s favorite desserts, according to the yellowing 3×5 card this recipe was printed on.
Comment by Adam Rakunas 10.23.09 @ 1:50 pmI just made this for Mom and Dad and used a peach instead of an apple. Also tasty.
Comment by Mary Robinette Kowal 02.10.10 @ 6:42 pmIt’s the recipe that keeps on giving.

You are wonderful.
Do you think it would work with almond flour? It is the only thing I have in the house right now.
